For the 2025/2026 harvest Juan has decided to experiment with the processes and will feature a yellow honey.

The difference between red honey and yellow honey is that more mucilage (fruit) is removed from the beans, before leaving them to dry under the sun. This makes the honey process taste a little bit closer to a fully washed.

Toningo is a funky and flavourful coffee from the Sierra Madre Oriental mountain chain in the state of Veracruz. Juan Zapata began growing coffee in 1974, in an effort to protect the forest around his town. Today, he is committed to planting one tree for every kilo of coffee sold.
