We try to make a difference.
What does it mean to work together? Just paying fairly to the farmers and vi ses næste år? That would just be a good client, but not a collaboration.
So what do we do?
We sit down and talk. We walk around and talk. I notice I already have 12 mosquito bites on my neck. We talk with no agenda, just to bond, to know each other, to understand what coffee looks like on each side of the world. We laugh. We eat together. And we repeat the next day. Then, ideas start to flow.
Juan told us he uses his roof to dry the coffee after depulping. When it rains, he stores it inside and waits. That waiting can cause an unplanned fermentation.
Now let's recap a little bit. Juan's coffee has two processes: yellow and red honey. Both processes have a degree of fermentation: red honey is more fermented than yellow honey. However, this is planned and controlled fermentation. An unplanned fermentation can mean a loss of quality.
So we came up with san idea: a small drying dome next to his house, where the coffee can dry during the rain. Controlled environment, measurable moisture, replicable results. A different process, but a reliable one.
How did we fund it? We paid 14 kr. extra per kilogram. Juan's production is small, but it was enough.
